Until quite recently, school meals were generally provided by Local Authorities or by large volume contract caterers. The standard of ingredients tended to be poor and kitchen skills had all but disappeared.
At the start of the new century, Lunchtime UK brought some fundamental changes to the school meals arena. By retraining college caterers to the highest standards and by using fresh, locally sourced ingredients, we were able to increase turnover in the schools we served by an average of 150% – almost overnight.
Despite lower gross margins and higher staff costs, this model has generated better returns for our business due to higher turnover and less waste.
